ice cubes
4 cl gin
2 cl rosemary simple syrup
2 cl lemon juice
8 cl soda water

For the rosemary simple syrup:
500 ml (2 cups) water
500 g granulated sugar
5 rosemary sprigs

1. To make the rosemary simple syrup, combine all ingredients in a small saucepan. Place the pot over medium heat and bring to a boil. Once the sugar has dissolved completely and the liquid is completely clear, take off the heat. Let cool to room temperature and remove the rosemary sprigs. Store in the fridge until needed or for up to 2 to 4 weeks.

2. Fill a glass of your choice with ice. Add the gin, syrup and lemon juice and top with the soda water. Stir briefly and serve.
